Why not just take the C clip out of the tower that way the whole tower can come down? Might need a special tool for the C clip but not really sure. My dealer did it for me twice already.
Couldn't you just back the bolts/stops out on the cable insted of taking them off ? If I remember right there was about 1 1/2 of thread on the cables on both side of the stops for adjustment
Here is a picture of your tower bolt (looking up inside the port side gunnel). The wire with the stop (not in the picture) is hanging right in front of this. You can take out the speaker and reach in there through the opening.
Yes you can get some threaded hex spacers and a threaded bolt+nut if you need to extend beyond the stock adjustment. This is how we do it on the 19' AR tower so if the 240 tower is similar it should work https://jetboaters.net/threads/ar-wake-tower-cable-removal-to-change-fold-height.11639/. It allows for enough adjustment to put the tower just above the steering wheel.

I ended up changing out the 36 inch Pole to a 39 inch Pole on the PVC holder. With that the tower light just clears the opening and you can actually slide a piece of paper in between the tower folded and the snap for the cover. Now that I actually know where I need the tower I want to try to extend the stops to stop the tower at that point
