Best cruising speed for 2017 AR240? (Gas mileage)

For most planing boats it will be just onto plane where you're not plowing water. The motor may want slightly faster.
Seems most Yamaha boats like that 25-30 mph spot
 
Agree. Also depends on wind conditions too. Sometimes, I get great cruising at 20 mph when there is really no wind on the lake.
 
Look at any of the boat reviews of the 242s on YouTube from Boat Magazine and the likes. They post charts and tables showing fuel consumption at incremental speeds / RPMs. On your motors, I believe the best economical speed is at 5,500 RPM, which yields ~27MPH or something like that.
