When I crank up the engines, both of them start and then stop. Then, I try again and they run without issue. Not sure if this is normal behavior... any suggestions?

Humble suggestion that fixes this on my MR-1: New Spark plugs.
 
I have a 2016 212ss that does the same thing. It started and shuts off 2x on both engines. Do youknow how long it can go before I need to change the spark plugs? Thx

These boats and engines are finicky about anything less than a perfect/near new spark plug. I would change them annually.
 
It is also possible that your clean out hatch kill switch is misaligned, or your safety lanyard is not fully engaged. Check both of those. (a quick test for the hatch is to tape a quarter to the spot where the button rests....if the problem is solved, then adjust the button with the adjustment threads).

Julian, very appreciated... I will make sure to test the kill switches on the hatch...
