So I just picked up my trailer after getting new brakes hubs and bearings put on and this is what the new sealed hub looks like. How do I add grease to it and can I just pull that cap off and add a bearing buddy?

Those are basic dust caps. Depending on your spindles, you should be able to add bearing buddies. If your spindles have a grease fitting at the end, then no bearing buddies won't work.
 
I have these on my trailer and need to do Bearing Buddies. Do you just measure and order the required size?
 
Definitely swap for buddies. The spring pressure keeps water out when you dunk it in the drink. I tried running with just caps for one season and got water in the grease.
 
Take it back and ask for bearing buddies.... Asap

Then choose a new place for maintenance in two years...
