I installed my Simrad Go9 and it included the template for the 12inch. I mocked it up and it would be a very tight fit, but can be done very carefully.

I have the go9 flush mounted and wish it were bigger and surface mounted. Would be less glare, closer to eye level, therefore easier to see. Would also be nice to flip and see from the bow. Truth be told, I want both and plan to add go12.
My only fear of the top of the console is I am short and don't want to have any obstructions. I will certainly consider it before I cut the console. And I agree it would be nicer to swivel it. I will take pictures with what I come up with.
I had a Garmin 1042xsv installed. It’s slightly wider than the Simrad GO12 XSE due to the button controls, but the Garmin is over an inch shorter. As you can see, there is a little space left underneath mine (you can’t go any higher up on the console since there is a lip at the top), but I’m not sure it’s enough space for the Simrad. If it is, it’ll be very close.

This is what I did. Works great. And I can tilt it down, so if I am fishing off the back or just lounging around anywhere on the boat, I can see the screen. I have a 12inch Solix. I have never had it get in my way of seeing the water. With the right surface mount, you can bring it down and towards you to even lower it more. The ability to point the screen right at your face, makes up for the extra clutter look with it being surface mounted. From a function standpoint, it works very well. Especially of you use it while moving around in the boat. I have a bow mount unit also, buy rarely use it.
