Probably better to put some spacers behind it. The stainless steel leg is super expensive because its only available from yamaha
 
I would like to do the same install on my sx 190 (2021) to be used to hold an umbrella, table, rod or grill. I'm just a bit concerned about the fiberglass. I will do as well a metal/wood large plate in the back to help distributing the weight but I'm still scared that it will crack the firberglass especially when I will use the metal pole to hold an umbrella in case of wind. Thoughts?

It will be fine. I have a 6"x6" aluminum backing plate on mine
