Final Update from me on this topic - I found a solution I am VERY HAPPY and am with final results
I purchased - Stainless Steel Latches 2.5" from Amazon, unsure of what to expect. Upon opening them, they are sturdy! Heavy duty, durable, stainless construction, I was amazed that they only cost $40! The description of the product is "YUSOVE Flush Mount Latch Fits 2-1/2" Hole,Non-Locking Surface-Mount Latch,316 Stainless Steel Boat Cam Latch"
Small Issue - The Pin needed to be driven in another 1/8 inch, I just tapped it in with a punch, I do not expect others to have that issue, but it was something I noticed, so I fixed it and went on to install
Installation - These are plug and play, literally no adjustments, same as OEM, just needed to set the height of the cam to desired locking pressure

Final Verdict - These are fully stainless, plug and play, better than OEM in every way, and cheaper.... MUST BUY UPGRADE!
