Amazing boat, nice work! The family will appreciate the time outside for sure!
Don't wait on the repair, think of it as part of the waxing process. I would bet some 3M rubbing compound and you will melt just enough gelcote to make them nearly gone. And then you will feel better about your baby for the rest of the summer. Rather than explain to everyone that notices it.
It was super easy for me as I just paid the local Jeep offroad guy to install it; I think he charged me 300. There's videos online and it looks easy enough if you have a lift or jack stands. The compressor that I got is bluetooth so you don't need to run air lines into the cabin, which also makes it easier to install. It has a remote control and a smart phone app. No failures yet, but my boat is new. I've heard the bags can get a hole in them after a while, but we'll see how long they last. Heat shielding may be an issue depending how the exhaust runs on your truck; another reason I just took it to our offroad guy.

So in total you dropped about $1K? Not bad. This might have to go on the wish list for a hot minute... The house demands to be painted and the deck is a mess. We just bought this house before the boat and now we are finding the issues. But, all in due time it will all be golden!

Start by hand till you see if it is working or not. Buffing and wet sanding is designed to level the gouge by melting just enough to fill and smooth. True gelcote repair will add additional colored material where gelcote is missing. If this is more of a scratch (not down to fiberglass, then wet sanding and buffing will do it.
Starting small will also allow you to test how it will haze it. As after you are done buffing or sanding, wax will be needed to bring back the shine and mirror finish. I did this on our Black boat we owned prior to your Yamaha. My wife accelerated into a dock freaking out. Well I freaked out till I realized I could buff it back to the point that you didn't see it unless I pointed it out.
Good luck!
PS: Buffing compound also turns yellowed topside hulls back to white. I say topside as it's faded from use/sun. under the water line is usually bio, and requires acid wash. Doing a light buff by hand will change it so dramatically, you will find yourself turning the radio, cracking a beer and doing the whole damn thing! (you have a 2020, this won't be your issue for a while)
I live in Niagara on the Lake, just across the NY border. However, I work in Burlington, about half hour outside Toronto! And I actually just spent the last in college in the Hamilton area! used to work there as well! Small world LOL
