Oh thats interesting, I hadnt thought about that, putting the bag in the center and using the boat ballast for one side or the other. Have you tried with the bag all the way on the back platform?

Yes. We bought the bag that is designed to sit on the back seat area from FAtsac. So it is on both levels of the swim platform. The boat actually handles better and gets to speed easier sitting in the middle. And instead of ropes going to both sides we run it through the top handles with one rope going to the tower. That way it is just all hooked up and just loop it to the tower and it’s done. I use the Yamaha wake booster which is easy to set up.
Here is a picture with the bag in the center. For reference I’m 6’2” and 225#. This is 100% ballast on the surf side and 25% in the center locker, with the 725# Fatsac in the middle at 10 mph.
